Homemade mint chutney

As promised here is the recipe for the homemade mint chutney. It is really good for digestion and adds a lot of flavour to the food.
Ingredients:
1. Mint leaves (a big handful)
2. Coriander leaves (as many as you like)
3. Fresh lemon juice (one big lemon)
4. Ginger (I use ginger paste, so one tbsp)
5. Tomato (one tomato)
6. Onion (half onion)
7. Peanuts (optional - small handful)
8. Green Chillies (according to how spicy you want it)
9. Salt to taste

Before we get into making this yummy chutney let's talk about the benefits of the main ingredients used in this chutney.
Mint leaves
Mint leaves are known to be great appetiser or palate cleanser and it also helps with indigestion or inflammation.
Coriander leaves
Coriander leaves form a major part of indian cooking. Either fresh leaves or coriander powder is used in making most of the culinary dishes. The health benefits of coriander include its use in the treatment of skin inflammation , high cholesterol levels, diarrhea, mouth ulcers, anemia, indigestion, blood sugar disorders, while also benefiting eye care to name a few.
Lemon
Lemon is also known to help with digestion and keeping blood sugar levels in check. It is also known to aid with weight loss and skin care. Lemon is full of vitamin C, vitamin B6, vitamin A, vitamin E, folate, pantothenic acid, copper, calcium, iron, magnesium, potassium, zinc, phosphorus and protein.
Ginger
Ginger is loaded with nutrients and bioactive compounds that are beneficial for your brain and body. It is also really good digestion and is an anti inflammatory too.
Let's make it:
1. Wash the mint and coriander leaves
2. Put all the ingredients in the mixer grinder
3. Add a little water and mix it till it looks like chutney
4. Put it in a container
5. Store it in the fridge for up to a week.
6. Enjoy it with anything and everything to help with digestion and lots of other benefits.
In my house it never lasts for more than two days. My husband loves it so much he eats it with every meal and every snack. May be I have to grow more mint and coriander plants this summer.
